Ingredients:
- 1 cup almond flour
- 1/4 cup coconut flour
- 1/4 cup tapioca flour
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup coconut oil, melted
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
Instructions:
Preheat oven to 350F 175C and line a baking sheet with parchment paper
In a large mixing bowl, combine almond flour, coconut flour, tapioca flour, baking soda, and salt
Add melted coconut oil, honey or maple syrup, and vanilla extract to the dry ingredients
Mix until a dough forms
Place the dough between two sheets of parchment paper and roll out to about 1/8 inch thick
Remove the top parchment paper and transfer the rolled-out dough onto the prepared baking sheet
Using a knife or pizza cutter, score the dough into graham cracker-sized squares
Prick each square with a fork to create holes
Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown
Remove from the oven and let cool completely on the baking sheet
Once cooled, break along the scored lines into individual crackers
Store in an airtight container at room temperature for up to a week
