Ingredients:
- 4 large collard green leaves
- 1 cup shredded cabbage or coleslaw mix
- 1/4 cup shredded carrots optional
- 1/4 cup chopped red onion
- 1/4 cup mayonnaise or dairy-free alternative
- 1 tablespoon apple cider vinegar
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
- Sliced avocado, for garnish
- Fresh cilantro leaves, for garnish
Instructions:
Shred cabbage or coleslaw mix, carrots if using, red onion chopped, mayonnaise or a dairy-free alternative, apple cider vinegar, Dijon mustard, salt, and pepper in a bowl
Make sure the vegetables are evenly covered with the dressing by mixing until everything is well mixed
Lay a collard green leaf out flat with the stem facing up
Spread some of the coleslaw mix in the middle of the collard green leaf
Add fresh cilantro leaves and sliced avocado on top to make it taste even better and look even better
Tuck the sides of the collard green leaf in as you roll it up to make a wrap
Do it again with the rest of the coleslaw mix and collard green leaves
If you want, you can cut each wrap in half diagonally before serving
