Ingredients:
- 2 cups fresh spinach, chopped
- 1 cup crumbled feta cheese
- 1/2 cup ricotta cheese
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1/4 teaspoon nutmeg
- Salt and pepper to taste
- 1 package of dumpling wrappers
- 2 tablespoons olive oil
Instructions:
In a mixing bowl, combine the chopped spinach, crumbled feta cheese, ricotta cheese, grated Parmesan cheese, minced garlic, nutmeg, salt, and pepper
Mix until well combined
Place a small amount of the spinach and cheese mixture in the center of each dumpling wrapper
Moisten the edges of the wrapper with water and fold it in half, creating a half-moon shape
Seal the edges by pressing them together firmly
Heat olive oil in a skillet over medium-high heat
Once hot, add the dumplings in a single layer, making sure not to overcrowd the pan
Cook for 2-3 minutes or until the bottoms are golden brown
Add a splash of water to the skillet and cover it with a lid
Reduce the heat to low and steam the dumplings for an additional 3-4 minutes or until they are cooked through
Serve the Greek Spinach and Feta Dumplings hot, garnished with extra grated Parmesan cheese if desired
