Ingredients:
- 1 pre-made vegan pizza dough
- 1 cup cooked black-eyed peas
- 1 block firm tofu, pressed and crumbled
- 2 tablespoons nutritional yeast
- 1 teaspoon dried thyme
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 cup marinara sauce
- 1 cup vegan mozzarella cheese, shredded
- 1/4 cup fresh basil leaves, chopped
- 2 tablespoons olive oil
Instructions:
Preheat the oven to 400F 200C
Roll out the pizza dough and press it into a deep dish pizza pan, making sure it covers the bottom and sides evenly
In a bowl, mix the cooked black-eyed peas, crumbled tofu, nutritional yeast, thyme, garlic powder, onion powder, salt, and pepper to make the tofu thyme ricotta mixture
Spread marinara sauce evenly over the pizza dough
Layer the tofu thyme ricotta mixture over the marinara sauce
Sprinkle vegan mozzarella cheese over the tofu mixture
Drizzle olive oil over the top
Bake in the preheated oven for 20-25 minutes, or until the crust is golden brown and the cheese is melted and bubbly
Once baked, sprinkle chopped fresh basil leaves over the pizza
Let it cool slightly before slicing and serving
