Ingredients:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- teaspoon salt
- 2 cups Cinnamon Toast Crunch cereal, crushed
- 1 cup buttermilk
- Cream cheese frosting
- Powdered sugar for dusting
Instructions:
Preheat the oven to 350F 175C and line baking sheets with parchment paper
In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy
Beat in the eggs, one at a time, then stir in the vanilla
In a separate bowl, whisk together the flour, baking powder, baking soda, ground cinnamon, and salt
Gradually add the dry ingredients to the wet ingredients, mixing until just combined
Fold in the crushed Cinnamon Toast Crunch cereal
Add the buttermilk and mix until the batter is smooth
Drop spoonfuls of batter onto the prepared baking sheets, spacing them about 2 inches apart
Bake in the preheated oven for 10-12 minutes, or until the cookies are golden around the edges
Allow the cookies to cool on the baking sheets for a few minutes, then transfer them to a wire rack to cool completely
Once the cookies are completely cool, spread a layer of cream cheese frosting onto the flat side of half the cookies
Top with the remaining cookies to create cookie sandwiches
Dust the tops of the whoopie pies with powdered sugar
Serve and enjoy
