Rachel Schultzs Walnut & Rosemary Oven Fried Chicken is a tasty take on the classic oven-fried chicken. Putting together crushed walnuts and fresh rosemary makes a crunchy coating that goes well with soft chicken breasts. Its also better for you than regular fried chicken because its baked instead of fried.
Ingredients:
- 4 boneless, skinless chicken breasts
- 1 cup crushed walnuts
- 2 tablespoons chopped fresh rosemary
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- Salt and pepper to taste
- Cooking spray
Instructions:
Preheat oven to 400F 200C
In a shallow dish, combine crushed walnuts, chopped rosemary, flour, salt, and pepper
Dip each chicken breast into beaten eggs, then coat with the walnut mixture, pressing gently to adhere
Place coated chicken breasts on a baking sheet sprayed with cooking spray
Bake for 20-25 minutes, or until chicken is cooked through and coating is crispy
Serve hot and enjoy
