Ingredients:
- 2 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red bell pepper, diced
- 1/2 cup yellow bell pepper, diced
- 1/2 cup carrots, shredded
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1/4 cup roasted sunflower seeds
- 1/4 cup dried cranberries
Instructions:
Put the mixed greens, cherry tomatoes, cucumber, red and yellow bell peppers, carrots, red onion, and cilantro in a large bowl
Mix the Cashew Ranch Dressing ingredients see separate recipe in a different bowl using a whisk
Pour the Cashew Ranch Dressing over the salad and mix everything together
